Banana French Toast Bake


So you have a bunch of leftover bread. Whether it is from a french baguette, or a loaf of whole wheat, or some rolls from the dinner party the night before or just some hamburger or hot dog buns. They all work for this dish! We especially like potato bread hot dog buns!
Banana French Toast Bake

Serves 4
3 cups cubed bread. Cut it into 1 inch cubes. If using sliced bread, just tear it into big pieces.
6 eggs
1/2 c. low fat milk
1/4 c. maple syrup
1 tsp cinnamon
1/2 tsp nutmeg
2 ripe bananas, sliced

1. Preheat
2. Spray pam into a 8x8 baking dish
3. mix eggs, milk, cinnamon, maple syrup and nutmeg in a small bowl

4. 1 layer of bread to cover the bottom of the dish. Pour 1/3 of the egg mixture over the top. Then cover with 1 layer of sliced bananas.
5. add another layer of bread, and repeat the process.
6. Add the final layer of bread, and pour the rest on the egg mxture on top. Make sure all the bread is soaked in the egg mixture. Sprinkle with a little extra cinnamon.

Bake for 35-40 minutes. Or until the center is set and golden brown.
Allow it to rest for about 5 minutes before serving it.
Dish it out and sprinkle with powdered sugar, or syrup, or butter.
It tastes even better as leftovers, because the flavors have combined and the bread is so moist.
